Preheat the oven to 200°

Unroll the pastry and using a 4 cm round cookie cutter, cut out 20 pastry discs. Place 10 pastry discs onto a lined baking tray and brush with egg.

Top with some cheese, a dusting of paprika and some picked thyme.

Place the remaining discs on top and secure the edges, brush with egg and a little more cheese and thyme.

Bake for 10 minutes, turn down the heat to 160° C and bake for a further 5 minutes.

Remove from the oven and serve hot or room temperature.
