Preheat the oven to 180° Unroll the pastry and using a side plate, cut out two large pastry rounds, place the pastry onto a lined baking tray, brush with egg and top with chocolate drops. Repeat this process twice.

Bake for 10 – 15 minutes until golden and cooked through, remove from the oven and set aside to cool.

Whip the cream to a stiff peak, fold in the custard and set aside.

Place a giant cookie onto a cake stand or serving plate, top the biscuit with some custard cream and sandwich with another giant biscuit, repeating this process until you have layered all the biscuits and custard filling to create a layered cake. Dust with icing sugar before serving and enjoy.
