Preheat the oven to 200°C. Line a baking tray with baking paper.

Unroll the Today® Original Puff Pastry, cut the pastry horizontally across the middle and then cut into 8 even vertical strips. Brush the pastry strips with egg and place onto a lined baking tray. Bake for 15 minutes.

To make the chocolate ganache: Place half the cream into a small pot and bring to the heat, remove before simmering and add the chopped chocolate. Whisk until a smooth chocolate sauce has formed.

Whisk the remaining cream to form stiff peaks and set aside.

Remove the pastry from the oven and set aside to cool. Top half the pastry strips with cream and sandwich with the remaining 4 pastry strips and drizzle over chocolate ganache.
