Ingredients
- 400g TODAY® Original Puff Pastry, thawed and cut into bite-size pieces
- 3 eggs, separated
- ½ cup (125ml) castor sugar
- 250g tub mascarpone cheese
- 1 cup (250ml) strong black coffee
- 6 lady finger biscuits, broken into pieces
- 4 Biscoff biscuits

Bake the pastry pieces for 15 minutes until golden. Leave to cool completely.

Whisk the egg yolks and sugar together until light and fluffy. Add the mascarpone and stir until just combined.

Whisk the egg whites until stiff. Fold in half of the mascarpone mixture, then fold in the rest very gently. Set aside

Dip the pastry pieces and finger biscuits into the coffee and place into 4 serving glasses. Top with a generous layer of tiramisu filling. Dip the remaining pastry and Biscoff biscuits into coffee and place on top of the filling. Dust with cocoa and place in the fridge to set for 4 hours or overnight.
