Mushroom and Gruyere Tart

Preheat the oven to 200°C.

Unroll the pastry and place it onto a lined baking tray.

Heat the butter in a large frying pan over a medium heat. Sauté the mushrooms and thyme for 10 minutes. Season with salt and pepper.

Using a knife, score a 1cm edge around the pastry sheet. Brush the pastry with olive oil, sprinkle over the cheese and top with the sauteed mushrooms.

Bake for 20 minutes, until the pastry is golden and the tart is cooked through.
