Preheat the oven to 200°C.

Unroll the pastry, and place onto a lined baking tray, score a 1cm edge around the edge of the pastry and top with the grated cheese, cooked bacon and sprigs of thyme.

Crack the eggs over the grated cheese and place the tart into the oven for 20 minutes.

Remove and serve.
