High Protein Cottage Cheese Muffins

Ingredients
- 400g Today® Original Puff Pastry, thawed
- 250g tub full fat cottage cheese
- 3 eggs
- 2 Tbsp (30ml) chives, chopped
- ½ cup (125ml) grated cheddar

Preheat the oven to 180°C.

- Cut out 12 circles of pastry, each about 8 cm in diameter.

Lightly grease a 12-cup muffin tin, then press pastry circles into the base and up the sides of each cup.

Evenly divide the cottage cheese among the pastry-lined cups.

In a bowl, whisk together the eggs and chives. Season with salt and black pepper.

Pour the egg mixture evenly over the cottage cheese in each cup.

Sprinkle grated cheddar cheese on top of each one.

Bake for about 25 minutes, or until the filling is set and the tops are golden brown.
