Preheat the oven to 200°C. Unroll the Today® Original Shortcrust Pastry and place onto a lined baking tray, using a knife score the edge of the pastry. Brush with egg and bake for 20 minutes.

Heat a griddle pan over a high heat, drizzle halloumi slices with olive oil and grill for 1 minute on each side. Remove and set aside.

Top the baked pastry with passata, halloumi, cherry tomatoes and thyme. Return to the oven for 5 minutes. Remove and serve.
