Family Pizza

Ingredients

  • 1 400g TODAY® Original puff pastry, ready rolled
  • 75g Rhodes Quality Tomato Paste
  • 100g grated mature cheddar cheese, grated
  • 200g grated mozzarella, grated
  • 1 tomato, sliced
  • 100g button mushrooms, sliced and sautéed
  • 100g cooked streaky bacon, cooked
  • 50g feta, crumbled
  • ¼ red onion, cut into thin slithers
  • A few sprigs of fresh thyme
  • Wild rocket and fresh basil leaves for garnish

Instructions

  • Preheat the oven to 190°C and line a baking sheet with baking paper.
  • Unroll the TODAY® Original puff pastry on the baking paper. Use a knife to score a 1cm edge around the pastry and cut the pastry into 4. Score an edge around each quarter of pastry.
  • Spread the pastry, but not the edges with tomato paste, sprinkle over a mixture of cheddar and mozzarella cheese. Leave one-quarter with just plain cheese.
  • On the second quarter, add a few fresh tomato slices.
  • On the third quarter, add some sautéed mushrooms and crispy bacon.
  • On the last quarter, add crumbled feta, red onion and a few sprigs of fresh thyme.
  • Season the pizza with salt and pepper and bake at 180°C for 20-25 minutes.
  • Remove from the oven and serve topped with fresh rocket or basil.
