Preheat the oven to 180°C.

Unroll the pastry and use Christmas themed cookie cutters to cut out as many biscuit shapes as you can. Place the pastry cut-outs onto a lined baking tray and bake for 8 – 10 minutes, until golden brown and cooked through.

Set aside to cool on a cooling rack.

Whisk the egg white and fold in the sifted icing sugar. Place the icing into a piping bag with a small round nozzle and decorate as desired, sprinkle with your choice of sprinkles.
