Ingredients

  • 1 400g Today® Original Puff Pastry, thawed
  • 100 g grated mozzarella cheese
  • 100 g grated cheddar cheese
  • 500 g boerewors, cooked
  • 2 tomatoes, sliced
  • 3 sprigs of thyme
  • Salt for seasoning
  • Hinds Spices Pure Black Pepper for seasoning
  • 50 ml olive oil
  • 100 ml fruit chutney, for serving

Instructions

  • Prepare a fire for braaiing and wait until the coals are ready to cook over a medium to low heat.
  • Unroll the pastry, spread half the pastry with the grated cheeses.
  • Cut the cooked boerewors into 4 pieces and cut them in half lengthways. Top the cheese with boerewors slices, then tomato slices and lastly the thyme. Season with salt and pepper. Fold over the remaining pastry. Using a fork, seal the edges of the pie.
  • Brush with olive oil.
  • Place the pie into a braai grid and braai for 20 minutes, over a low heat, turning the braai grid regularly. 
  • Once cooked, cut into squares and serve with fruit chutney.
