400g Today® Original Puff Pastry, thawed

(30 ml) Rhodes Quality Tomato Paste

mozzarella cheese, grated

streaky bacon, cooked

eggs

wild rocket
Instructions
Preheat the oven to 200°C. Unroll the Today® OriginalPuff Pastry and place onto a linedbaking tray, using a knife score the edge of the pastry.
Spread with Rhodes Quality Tomato Paste and top with mozzarella and streaky bacon.
Bake for 10 minutes, remove from the oven and crack over the 3 eggs, return to the oven to bake for a further 10 minutes.
Remove from the oven and top with fresh rocket.
