Festive Pastry Pesto Wreaths

Ingredients
400g Today® Original Shortcrust Pastry, thawed

(45 ml) basil pesto

cherry tomatoes, halved

Tbsp
(30 ml) olive oil
Fresh basil leaves for serving
Instructions
Preheat the oven to 200° C.
Unroll the pastry and using an 8cm round cookie cutter, cut out 20 circles. Using a smaller cutter, cut out the centers.
Place the pastry rings onto a lined baking tray, spread pesto over each ring, and top with cherry tomatoes. Bake for 10 minutes.
Remove from the oven and drizzle over olive oil and top with fresh basil. Serve and enjoy.
