Preheat the oven to 200°C. Line a baking tray with baking paper.
Unroll the Today® Original Puff Pastry onto the baking tray. Spread cream cheese down the middle 3rd of the pastry. Top with cooked spinach, bacon and tomatoes, make four indents in the filling and crack the eggs into those indents. Season with salt and pepper.
Cut 10 diagonal strips on either side of the filling and crisscross them over each other. Brush with egg and bake for 15 minutes, reduce heat to 180°C and bake for another 10 minutes. Remove from the oven and serve while hot.
