Preheat the oven to 200°C. Line a baking tray with baking paper.
Unroll the Today® Original Puff Pastry onto a lined baking tray and cut into 10 equal squares.
Divide the blueberries between the 10 squares and place them into the centre of each square. Top with a sprig of fresh thyme and a drizzle of honey.
Brush the edges of the pastry with egg and fold over the corners and pinch the corners together to create a parcel. Brush the rest of the pastry with egg and bake for 15 – 20 minutes until golden and cooked through. Remove from the oven and dust with icing sugar. Best enjoyed with vanilla ice cream.
