Preheat the oven to 190°C and line a baking sheet with baking paper.
Unroll the TODAY® Original puff pastry on the baking paper. Use a knife to score a 1cm edge around the pastry and cut the pastry into 4. Score an edge around each quarter of pastry.
Spread the pastry, but not the edges with tomato paste, sprinkle over a mixture of cheddar and mozzarella cheese. Leave one-quarter with just plain cheese.
On the second quarter, add a few fresh tomato slices.
On the third quarter, add some sautéed mushrooms and crispy bacon.
On the last quarter, add crumbled feta, red onion and a few sprigs of fresh thyme.
Season the pizza with salt and pepper and bake at 180°C for 20-25 minutes.
Remove from the oven and serve topped with fresh rocket or basil.
