How to make a lattice tart using TODAY® Original Shortcrust Pastry

1400gRoll TODAY® Original Shortcrust Pastry
1Egg, beaten
Instructions
Unroll the TODAY® Original Shortcrust Pastry and cut vertically into 1cm thick strips.
Place one strip in the center of the tart vertically. Continue this process, but fold back every second strip, ensuring you leave a gap to see the filling between each strip.
Place one pastry strip horizontally, below the folded strips of pastry and fold all those pastry strips over that piece, creating a weave. Continue this process with the bottom half of the tart.
Repeat this process with the top half of the lattice tart. You should end up with a lovely even weave.
Using your fingers, gently press or cut off the remaining edges and seal them to the lined pastry base.
